The story of coffee has its beginnings in Ethiopia, the original home of the coffee plant, coffee arabica, which still grows wild in the forest of the highlands. While nobody is sure exactly how coffee as a beverage came about, it is believed that its cultivation and use began as early as the 9th century. Production of Coffee Produced using three very distinctive methods - (the forest system, the small farm or cottage system and the plantation system) - Ethiopian coffee has earned itself a reputation as one of the finest, most flavourful coffees in the world. The forest system means coffee grows under a forest canopy and needs very little human interference. The small farm or cottage system is the most popular method for producing coffee in Ethiopia - in fact this method is responsible for 95% of all coffee production. The cottage system consists of small backyard gardens with a few coffee trees, which are harvested by hand. There are presently some 700,000 coffee smallholders who produce coffee in this way. The final method of production is the plantation system, which is becoming increasingly popular. This is farming on a larger scale using modern processing equipment and ensures more quality assurance advantages. The Yirgacheffee coffee bean, is the most favored coffee grown in southern Ethiopia. It is more mild, fruitlike, and aromatic. Ethiopian Yirgacheffee coffee may also be labeled as Sidamo, which is the district where it is produced. It is a coffee with a unique taste much sought after in the coffee world. It has a classic lemony tart taste and an intense "flora" aroma and taste. Many say that you can taste the coffee flower in this coffee. The Yirgacheffe is harvested from one 2000m altitude highland valley near Lake Abaya in the Sidamo region of Ethiopia (south of Addis Ababa). Ethiopian Harrar coffee beans are grown on small farms in the eastern part of the country. They are dry-processed and are labeled as longberry (large), shortberry (smaller), or Mocha (peaberry). Ethiopian Harrar coffee can have a strong dry edge, winy to fruit like acidity, rich aroma, and a heavy body. In the best Harrar coffees, one can observe an intense aroma of blueberries or blackberries. Ethiopian Harrar coffee is often used in espresso blends to capture the fine aromatics in the crema. Limu coffee comes from the western highlands of Ethiopia - the area around the town of Limu and Kaffa (the name possibly drawn from "coffee"). The coffee tree is indigenous to this land. It is the home of the original wild "Arabica typica" species - the ultimate coffee. Many coffee trees still grow in the wild in these highlands; and the Limu coffee contains fruit taken from these wild trees. This area represents the perfect habitat to grow truly superior coffee. The Limu crop is handpicked from a high altitude trees and wet processed. Several stages of sorting are employed. The beans have a distinctive rounded shape and bright greenish colour. Limu coffee is renowned for its good balanced cup and sweet winey flavours. It is commonly enjoyed as pure single origin coffee. It is popular with connoisseurs in Europe.
